Ingredients:
• Baguio Beans 50g
• Carrots 50g
• Jicama 50g
• Sweet Potato 50g
• Garlic 25g
• Onion 10g
• Vegetable oil 5ml
Method:
• Sauté onion until it becomes translucent
• Add sweet potatoes
• When the sweet potatoes are half cooked, add all remaining ingredients
• Season with salt and pepper
Ingredients to make Malunggay Crepe:
• Malunggay 50g
• Flour 200g
• Milk 100ml
• Egg 2pcs
Method:
• Boil malunggay leaves until they are dark green in color. Afterwards, put in an ice bath and remove excess water.
• In a blender, add milk, egg and malunggay
• Mix the malunggay mixture in a bowl
• In a non-stick pan, pour a medium ladle of the malunggay crepe mixture
Ingredients to make Lumpia Sauce:
• Soy Sauce 10ml
• Peanut Butter 25g
• Cornstarch 50g
• Brown Sugar 15g
• Water 100ml
Method:
• Boil water and soy sauce
• While coming to a boil, dissolve peanut butter and sugar
• When boiling add the cornstarch
Assembly of Fresh Lumpia:
In a plate, put the lumpia vegetable first then the lettuce on the malunggay crepe. Then roll and drizzle the lumpia sauce. Finish with peanuts and fresh garlic.
